Instructions

  1. Preheat grill to medium-high, between 375ºF and 400ºF.
  2. Season pork liberally with smoked salt and cracked pepper. Set aside at room temperature while grill is preheating.
  3. Once grill is hot, place pork over direct heat and cook for 8 to 10 minutes or until nicely marked. Rotate pork and continue to cook until internal temperature reaches at least 155ºF.
  4. While pork is cooking, make agrodolce. Place a small saucepan over medium heat and add oil, persimmons, and shallots. Sauté until both are soft.
  5. Add orange juice, apple cider vinegar, and brown sugar. Stir and turn down heat to a simmer. Sauce is ready when liquid has almost completely evaporated and thickened. Season to taste with salt and pepper.
  6. Allow pork to rest before carving. Serve sauce over pork as desired.
