Grilled Pork Tenderloin with Persimmons Agrodolce

Ingredients
- 1 1/4 lb Natural pork tenderloin
- 1 tbsp Smoked salt, or as needed to season pork
- 1 tbsp Cracked pepper, or as needed
- 2 tbsp Avocado oil
- 1 1/2 cups Fresh persimmons, diced small, approximately 2 persimmons
- 1/2 cup Fresh shallots, thinly sliced
- 1 cup Fresh squeezed orange juice
- 1/2 cup Apple cider vinegar
- 1/4 cup Dark brown sugar
Instructions
- Preheat grill to medium-high, between 375ºF and 400ºF.
- Season pork liberally with smoked salt and cracked pepper. Set aside at room temperature while grill is preheating.
- Once grill is hot, place pork over direct heat and cook for 8 to 10 minutes or until nicely marked. Rotate pork and continue to cook until internal temperature reaches at least 155ºF.
- While pork is cooking, make agrodolce. Place a small saucepan over medium heat and add oil, persimmons, and shallots. Sauté until both are soft.
- Add orange juice, apple cider vinegar, and brown sugar. Stir and turn down heat to a simmer. Sauce is ready when liquid has almost completely evaporated and thickened. Season to taste with salt and pepper.
- Allow pork to rest before carving. Serve sauce over pork as desired.
