Grilled Mexican Street Corn

Ingredients

  • 6 Corn on the cob
  • 1/2 cup Mayonnaise
  • 1/2 cup Grated Cotija cheese
  • 1 tsp Cayenne pepper

Instructions

  1. Preheat grill to 400ºF.
  2. Remove husks and silk from corn.
  3. Place corn directly on grill (no oil needed) and rotate every 3 - 4 minutes until grill marks form and corn is lightly colored. Remove from grill and allow to cool a little.
  4. Brush peppercorn ranch or mayo evenly on corn then dredge in Cotija cheese until fully coated on all sides.
  5. Sprinkle with cayenne pepper to add color and spice. Serve warm.
