Grilled Mexican Street Corn

Ingredients
- 6 Corn on the cob
- 1/2 cup Mayonnaise
- 1/2 cup Grated Cotija cheese
- 1 tsp Cayenne pepper
Instructions
- Preheat grill to 400ºF.
- Remove husks and silk from corn.
- Place corn directly on grill (no oil needed) and rotate every 3 - 4 minutes until grill marks form and corn is lightly colored. Remove from grill and allow to cool a little.
- Brush peppercorn ranch or mayo evenly on corn then dredge in Cotija cheese until fully coated on all sides.
- Sprinkle with cayenne pepper to add color and spice. Serve warm.
