Grilled Hatch Salsa

Ingredients
- 5 Hatch peppers or Anaheim peppers
- 1 Large white onion, sliced
- 3 Garlic clove, smashed
- 1 cup Fresh cilantro, leaves loosely packed
- 1/3 cup Lime, fresh juice
- 1 tsp Ground cumin
- 1/3 cup Extra virgin olive oil
Instructions
- Preheat grill to medium-high.
- Place peppers and onions on grill and cook until nicely blistered and caramelized. Remove to a bowl until cool.
- Remove stems, discard, and place peppers in a blender along with onions, garlic, cilantro, lime juice, cumin and olive oil.
- Blend until smooth then season to taste with salt and pepper.
