Unsaved Grilled Hatch Salsa

Ingredients

  • 5 Hatch peppers or Anaheim peppers
  • 1 Large white onion, sliced
  • 3 Garlic clove, smashed
  • 1 cup Fresh cilantro, leaves loosely packed
  • 1/3 cup Lime, fresh juice
  • 1 tsp Ground cumin
  • 1/3 cup Extra virgin olive oil

Instructions

  1. Preheat grill to medium-high.
  2. Place peppers and onions on grill and cook until nicely blistered and caramelized. Remove to a bowl until cool.
  3. Remove stems, discard, and place peppers in a blender along with onions, garlic, cilantro, lime juice, cumin and olive oil.
  4. Blend until smooth then season to taste with salt and pepper.
