Quick & easy:Grilled Haloumi with Arugula Salad

Ingredients
- 1 tbsp Olive oil
- 8 oz Haloumi cheese, cut into 2 equal serving portions
- 1 oz Prosciutto, about 3 to 4 slices
- 2 oz Arugula
- 1 cup Baby tomatoes, halved
- 1 tbsp Balsamic vinaigrette
Instructions
- Heat a non-stick skillet over medium high heat. Add oil and cheese to hot pan. Sear about 2 to 3 minutes on each side, or until golden brown. Remove cheese to a serving plate. Add prosciutto to the hot pan and sear briefly just to lightly crispy. Toss arugula and tomatoes with balsamic vinaigrette. Mound on top of seared cheese and top with prosciutto. Serve immediately.
