Grilled Fajita Chicken Bowl with Spicy Toreado Crema

Ingredients
- 1/4 cup Spicy Toreado Creama, recipe on heb.com
- 1/2 cup Cotija cheese, grated, as needed
- 1 cup Fresh guacamole, as needed for garnish
- 1 cup Fresh pico de gallo, as needed for garnishing
- 2 tbsp Lime juice, juice or as needed
- 1 2/3 lb Seasoned chicken for fajitas
- 16 oz Steamtable corn and poblano rice, as needed
- 1 cup Tortilla strips, as needed for garnishing
Instructions
- Preheat grill to medium high heat.
- While grill is preheating heat rice according to package instructions and keep warm.
- Place fajitas on grill and cook until nicely charred and internal temp reaches at least 170F. Remove from grill, drizzle lime juice over chicken and cover with foil to allow to rest.
- Once chicken is rested, thinly slice and place into a bowl and toss with any remaining resting juice.
- To assemble bowls, add rice then chicken, cheese, guacamole, pico and tortilla strips.
- Drizzle with crema as needed and season to taste.
