Grilled Cumin and Garlic Street Corn

Ingredients
- 1 cup Mayonnaise
- 1 Small lime, juiced
- 1 tsp Garlic Salt with Parsley
- 1/2 tsp Ground cumin
- 1/2 tsp Chili powder
- 1 tbsp Extra virgin olive oil
- 4 Fresh corn, husk and silk removed
- 1/4 cup Parmesan cheese, shredded
Instructions
- In a medium bowl combine mayonnaise, lime juice, garlic salt, cumin, and chili powder. Stir well to combine.
- Heat grill to medium-high. Drizzle olive oil on corn and rub to coat. Grill for 12 to 15 minutes, turning occasionally, until corn is bright yellow and slightly charred in places.
- Remove corn from grill and spread mayonnaise mixture on each piece to cover. Sprinkle with Parmesan cheese and serve.
- Chef's Note: Corn can be cut off the cob and mixed with mayonnaise mixture for corn in a cup presentation.
