Grilled Citrus Ceviche

Serves 4

Ingredients

  • 1 Jalapeño peppers, fine diced
  • 1 tsp Extra virgin olive oil
  • 1/2 cup Fresh cilantro, chopped
  • 2 Garlic cloves, chopped
  • 1 tsp Chipotle peppers in adobo, minced
  • 4 tbsp Lemons, juiced
  • 1 Red bell pepper, cored, seeded and chopped
  • 1/2 Red onion, fine diced
  • 1 lb Shrimp, peeled & deveined
  • 4 tbsp Limes, juiced

Instructions

  1. Preheat grill to medium-high.
  2. Toss shrimp with oil, place on grill and cook 2 minutes per side.
  3. Transfer shrimp to a cutting board, chop into smaller pieces and place in a large bowl.
  4. Add remaining ingredients, cover and chill 1 hour.
  5. Serve with H-E-B Baked Tostadas and avocado.
