Grilled Citrus Ceviche

Ingredients
- 1 Jalapeño peppers, fine diced
- 1 tsp Extra virgin olive oil
- 1/2 cup Fresh cilantro, chopped
- 2 Garlic cloves, chopped
- 1 tsp Chipotle peppers in adobo, minced
- 4 tbsp Lemons, juiced
- 1 Red bell pepper, cored, seeded and chopped
- 1/2 Red onion, fine diced
- 1 lb Shrimp, peeled & deveined
- 4 tbsp Limes, juiced
Instructions
- Preheat grill to medium-high.
- Toss shrimp with oil, place on grill and cook 2 minutes per side.
- Transfer shrimp to a cutting board, chop into smaller pieces and place in a large bowl.
- Add remaining ingredients, cover and chill 1 hour.
- Serve with H-E-B Baked Tostadas and avocado.
