Grilled Chicken and Vegetable Kabobs

Serves 4
Ingredients
- 1/3 cup Extra virgin olive oil
- 3 tbsp White vinegar
- 2 tbsp Chicken seasoning
- 1 lb Boneless, skinless chicken breasts, cut into 1 1/2-inch cubes
- 1 Corn on the cob, cut into 4 pieces
- 1 Medium red onion, cut in 1-inch chunks
- 1 Small red bell pepper, cut into 1-inch chunks
- 1 Small zucchini squash, cut into 1/4-inch slices
Instructions
- Mix oil, vinegar and seasoning in a small bowl. Place chicken in a large resealable bag, add marinade, seal bag and turn to coat well. Chill for 30 minutes or longer for extra flavor.
- Remove chicken from bag and discard remaining marinade. Alternately thread chicken and vegetables onto skewers then lightly sprinkle with additional seasoning if desired.
- Grill kabobs over medium heat, turning frequently, until chicken is cooked through and vegetables are tender, about 10 to 15 minutes.
