Grilled Chicken and Vegetable Kabobs

Serves 4

Ingredients

  • 1/3 cup Extra virgin olive oil
  • 3 tbsp White vinegar
  • 2 tbsp Chicken seasoning
  • 1 lb Boneless, skinless chicken breasts, cut into 1 1/2-inch cubes
  • 1 Corn on the cob, cut into 4 pieces
  • 1 Medium red onion, cut in 1-inch chunks
  • 1 Small red bell pepper, cut into 1-inch chunks
  • 1 Small zucchini squash, cut into 1/4-inch slices

Instructions

  1. Mix oil, vinegar and seasoning in a small bowl. Place chicken in a large resealable bag, add marinade, seal bag and turn to coat well. Chill for 30 minutes or longer for extra flavor.
  2. Remove chicken from bag and discard remaining marinade. Alternately thread chicken and vegetables onto skewers then lightly sprinkle with additional seasoning if desired.
  3. Grill kabobs over medium heat, turning frequently, until chicken is cooked through and vegetables are tender, about 10 to 15 minutes.
