Grilled Cauliflower Tacos

Ingredients

  • 1/4 tsp Ground black pepper
  • 1 tsp Paprika
  • 1/3 cup Chipotle peppers in adobo
  • 2 Garlic clove
  • 1 tsp Ground cumin
  • 2 tbsp Extra virgin olive oil
  • 1/4 tsp Kosher salt
  • 1 Cauliflower, head, cut into florets
  • 8 Yellow corn tortillas
  • 1 cup Pineapple chunks, diced
  • 1 Small White onions, diced
  • 1 cup Fresh cilantro, chopped

Instructions

  1. Heat grill to medium-high.
  2. In a food processor or blender, combine pepper, paprika, chipotle, garlic, cumin, olive oil and salt for marinade.
  3. Toss cauliflower and marinade together and place cauliflower on the grill and cook for several minutes until cauliflower is roasted and tender.
  4. Fill each tortilla with cauliflower, pineapple, onion and cilantro.
