Grilled Cauliflower Steaks with Creamy Pepper Parmesan Sauce

Serves 4

Ingredients

  • 1/4 cup Non-fat plain Greek yogurt
  • 1 tbsp Extra virgin olive oil
  • 1/3 cup Fresh grated parmesan cheese
  • 1 Large head of cauliflower
  • 1 tsp Kosher salt
  • 1/2 cup Peppercorn ranch dressing

Instructions

  1. Preheat oven to 400ºF and grill to 350ºF.
  2. Slice Cauliflower from top to stem in 1/4 to 1/2 inch slices (some pieces will be larger than others).
  3. Rub both sides of cauliflower with olive oil and place on a sheet pan lined with foil.
  4. Roast until just softened with a bit of color (about 15 minutes).
  5. Combine peppercorn ranch, Greek yogurt, and Parmesan cheese to form a smooth dressing. Set aside.
  6. Remove steaks from oven and grill about 2 - 4 minutes per side (or until both sides have good grill marks). Season to taste.
  7. Serve with a generous dollop of peppercorn Parmesan dressing.
