Grilled Cauliflower Steak Burger

Serves 4

Ingredients

  • 1 Large head of cauliflower, cut into 1/2 inch steaks from top to stem.
  • 2 tbsp Extra virgin olive oil
  • 4 Bakery sourdough buns, plus more as needed
  • 1 cup H-E-B Cilantro Lime Cotija Guacamole, as needed
  • 2 Sweet and spicy pickles, as needed for garnish

Instructions

  1. Fill a large pot with water and set over high heat. Bring to a boil, place cauliflower in pot and cook 3 to 4 minutes. Remove cauliflower and set aside.
  2. Preheat grill to medium-high. Season cauliflower liberally with salt and pepper then drizzle with olive oil.
  3. Grill 3 to 4 minutes per side or until nicely marked on both sides. Remove from grill.
  4. To assemble burgers, toast sourdough buns then add cauliflower steak and top with guacamole and pickles.
  5. Chef's Note: I like to serve this with Serrano Aioli (recipe on heb.com).
