Grilled Cauliflower Steak Burger

Serves 4
Ingredients
- 1 Large head of cauliflower, cut into 1/2 inch steaks from top to stem.
- 2 tbsp Extra virgin olive oil
- 4 Bakery sourdough buns, plus more as needed
- 1 cup H-E-B Cilantro Lime Cotija Guacamole, as needed
- 2 Sweet and spicy pickles, as needed for garnish
Instructions
- Fill a large pot with water and set over high heat. Bring to a boil, place cauliflower in pot and cook 3 to 4 minutes. Remove cauliflower and set aside.
- Preheat grill to medium-high. Season cauliflower liberally with salt and pepper then drizzle with olive oil.
- Grill 3 to 4 minutes per side or until nicely marked on both sides. Remove from grill.
- To assemble burgers, toast sourdough buns then add cauliflower steak and top with guacamole and pickles.
- Chef's Note: I like to serve this with Serrano Aioli (recipe on heb.com).
