Grilled Berry Ice Cream Shortcake

Ingredients

  • 1 cup Blueberries
  • 1/3 cup Four berry fruit spread
  • 1 lb Cake, 8 slices
  • 1 tbsp Salted butter
  • 1 pt Strawberry ice cream

Instructions

  1. Add fruit spread to a microwave safe bowl, heat for 20 to 30 seconds or until liquefied. Stir blueberries through and set aside.
  2. Place grill or grill pan over medium heat. Butter one side of each slice of pound cake then grill buttered side down for 2 to 3 minutes, or just until golden brown.
  3. Place each piece on a serving dish and top with a scoop of ice cream. Drizzle berry mixture over the top and serve immediately.
  4. Chef's Note: For a festive 4th of July dessert, top this off with sliced star fruit.
