Grilled Avocados

Unsaved Grilled Avocados

Ingredients

  • 4 Avocado
  • 1/2 cup Creamy Cilantro Cotija Dressing
  • 10 oz Pineapple
  • 1/4 tsp Crushed red pepper flakes
  • 1 Green onion, chopped
  • 1 cup Monterey Jack cheese, shredded

Instructions

  1. Combine jumbo avocado halves and 1/3 cup of cilantro cotija in a zipper bag and marinate for 30 minutes. Refrigerate until ready to grill.
  2. Chop green onions.
  3. To make salsa, add remaining cilantro cotija, pineapple chunks, red pepper and chopped green onion in a small bowl; toss to combine. Cover with plastic wrap and set aside.
  4. Heat coals or grill to medium heat (375°F).
  5. Brush hot grill with olive oil to prevent sticking.
  6. Grill marinated avocados on each side for 4 minutes.
  7. Top with shredded cheese and pineapple salsa.
  8. Serve warm.
