Grilled Asparagus with Yogurt Balsamic Hollandaise

Ingredients
- 1 lb Fresh asparagus, about as thick as a pencil
- 2 tsp Olive oil
- 1 cup Non-Fat Plain Greek Yogurt
- 3 Large eggs, yolks only
- 1 tsp Fresh garlic cloves, finely minced
- 1 1/2 tbsp Balsamic Vinegar Reduction
- 3/4 tsp Sea salt
Instructions
- Heat grill to medium
- Place a sauce pan, half-full of water over medium heat. Bring to a simmer.
- While water is heating, wash and trim woody ends from asparagus. Drizzle with oil and set aside
- Place egg yolks, yogurt, garlic and balsamic reduction in bowl. Whisk and place over simmering saucepan.
- Whisk constantly for 10 minutes, or until sauce is thickened, but still pourable. Add salt and whisk. Season to taste if more salt or balsamic is desired
- Remove yogurt hollandaise from saucepan and set aside.
- Place asparagus on hot grill and grill for 2 to 4 minutes, or until bright green and tender firm.
- Place on serving tray and drizzle with balsamic hollandaise
