Grilled Ahi Poke with Lime Pickled Cucumbers

Unsaved Grilled Ahi Poke with Lime Pickled Cucumbers

Ingredients

  • 1 tsp Kosher salt
  • 1/2 cup Limes, juice
  • 1 tbsp Black sesame seeds
  • 1 Large English cucumber
  • 1 tsp Extra fine granualted sugar
  • 1/2 cup Fried crispy onions
  • 1 tbsp Limes, juice
  • 1 tbsp Toasted sesame oil
  • 2 tbsp Soy sauce
  • 2 Frozen ahi tuna steaks, thawed
  • 1/2 cup Green onion(s), chopped

Instructions

  1. Cut cucumber thinly on a slight angle or bias and place them in a shallow dish. In a separate bowl combine salt, sugar and lime juice, then whisk with a fork to dissolve sugar and salt.
  2. Pour lime juice mixture over cucumbers and refrigerate 45 minutes to pickle. Preheat grill to medium-high while cucumbers pickle.
  3. Oil grill with any non-stick spray and place tuna on grill. Grill 1 to 2 minutes then rotate 90 degrees and grill 1 to 2 minutes more on the same side.
  4. Flip tuna and repeat for a total cook time of 6 to 8 minutes or until the internal temp reaches 130°F to 135°F. Time may vary depending on thickness of tuna. Remove from grill and let it rest.
  5. Meanwhile, prep poke ingredients. In a bowl combine green onions, sesame seeds, sesame oil, soy sauce and lime juice. Cut and cube grilled tuna and toss with the above mixture. Toss to combine.
  6. Serve a scoop of poke and pickled cucumber slices and top with crispy onions.
