Griddled Breakfast Burrito

Ingredients

  • 8 oz Mexican style shredded cheese
  • 10 Burrito flour tortillas
  • 10 Large eggs, beaten
  • 16 oz Frozen baby potatoes, cooked according to package directions
  • 10 oz Pico de gallo
  • 1 lb Pork breakfast sausage

Instructions

  1. Heat a large skillet on medium-high. Cook sausage until browned and no longer pink, about 7 minutes. Remove from pan and set aside.
  2. In a separate non-stick skillet over medium heat, scramble eggs, cooking for about 4 minutes. Set aside briefly and keep warm.
  3. Preheat a large skillet over medium-high heat.
  4. Gently heat a tortilla then add 1.5 ounces each of sausage, eggs, and potatoes. Top with 1 Tablespoon of shredded cheese and 1 ounce of pico de gallo.
  5. Fold in sides of tortilla over filling then roll up. Place seam-side down in preheated skillet for about 1 minute or until browned. Flip and continue to cook for an additional minute until second side is browned. Enjoy!
