Green Tahini Sauce

Ingredients

  • 1 cup Tahini paste
  • 3 Peeled Garlic Cloves, crushed
  • 1/4 cup Fresh lemons, juiced
  • 1/2 tsp Ground cumin, toasted in a dry pan if desired
  • 1 tbsp Fresh dill, minced
  • 1/2 cup Fresh cilantro, roughly chopped
  • 1/2 cup Curly leaf parsley, roughly chopped
  • 1/4 cup Fresh mint, minced
  • 1/3 cup Green onion, tops of onions only, no white stems
  • 1/3 cup Extra virgin olive oil

Instructions

  1. In a food processor, combine tahini, garlic, lemon juice, cumin, dill, cilantro, parsley, mint, green onions, and olive oil.
  2. Pulse everything to combine until smooth. Add water as needed 1 tablespoon at a time to reach desired consistency.
  3. Season to taste as needed.
  4. Chef's Note: I like to serve this over roasted or grilled chicken or lamb or as a dip with roasted cauliflower.
