Green Mole Sauce

Unsaved Green Mole Sauce

Ingredients

  • 2 Bay leaf
  • 9 Medium Fresh tomatillos
  • 1 Large Fresh jalapeno pepper, seeded
  • 5 Garlic cloves, approximately 1/4 cup
  • 1/2 cup Pumpkin seeds
  • 0.2 oz Fresh epazote, leaves only
  • 2 Fresh serrano peppers
  • 2 cups White onions, sliced
  • 2 cups Chicken stock
  • 1 cup Fresh fennel, fronds only, tightly packed
  • 2 cups Fresh cilantro, leaves only, loosely packed
  • 1 tbsp Toasted sesame seeds

Instructions

  1. Preheat oven to 400ºF.
  2. Place tomatillos, onions, and peppers onto a sheet pan into an oven. Roast for 20 to 30 minutes until tomatillos are just browned.
  3. Once tomatillo mixture is roasted remove from oven. Place mixture along with all remaining ingredients into a blender.
  4. Blend until smooth, pour mixture into a medium size pot set over medium heat. Allow mixture to cook for 30 minutes at a low simmer.
  5. Use sauce to smother over grilled chicken breasts or add to stew or use as a simmering sauce for anything.
