Green Mole Sauce

Ingredients
- 2 Bay leaf
- 9 Medium Fresh tomatillos
- 1 Large Fresh jalapeno pepper, seeded
- 5 Garlic cloves, approximately 1/4 cup
- 1/2 cup Pumpkin seeds
- 0.2 oz Fresh epazote, leaves only
- 2 Fresh serrano peppers
- 2 cups White onions, sliced
- 2 cups Chicken stock
- 1 cup Fresh fennel, fronds only, tightly packed
- 2 cups Fresh cilantro, leaves only, loosely packed
- 1 tbsp Toasted sesame seeds
Instructions
- Preheat oven to 400ºF.
- Place tomatillos, onions, and peppers onto a sheet pan into an oven. Roast for 20 to 30 minutes until tomatillos are just browned.
- Once tomatillo mixture is roasted remove from oven. Place mixture along with all remaining ingredients into a blender.
- Blend until smooth, pour mixture into a medium size pot set over medium heat. Allow mixture to cook for 30 minutes at a low simmer.
- Use sauce to smother over grilled chicken breasts or add to stew or use as a simmering sauce for anything.
