Green Chili Chicken Soup

Serves 8

Ingredients

  • 1 tsp Canola oil
  • 1 lb Ground Chicken Breast 97% Lean
  • 1/2 cup White onion
  • 2 Garlic clove, minced
  • 32 oz Chicken Broth
  • 7 oz Diced green chilies, drained
  • 2 cups Spinach, chopped
  • 32 oz Canned white beans, drained and rinsed
  • 1 tbsp Ground cumin
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. Heat stockpot over medium-high heat for 3 minutes.
  2. Add oil, ground chicken, onions and garlic to stockpot.
  3. Cook for 5 minutes or until chicken is brown and crumbly.
  4. Add chicken broth, chilies, spinach, navy beans and cumin.
  5. Bring to boil then reduce heat to medium.
  6. Cover and simmer for 20 minutes.
  7. Season with salt and pepper.
