Green Chili Beef Tamale Pie

Ingredients

  • 1 tbsp Grapeseed oil
  • 1/3 cup That green sauce, mild or medium, your choice
  • 1 cup Reduced fat 2% milk, to make cornbread
  • 15 oz Charro beans, canned borracho beans work well too
  • 1 cup Fresh red onions, finely diced
  • 1 1/2 lb Ground beef
  • 11 oz Cornbread mix
  • 4 oz Diced mild peeled green chilies
  • 1/3 cup Extra virgin olive oil, to make cornbread
  • 1/3 cup Fresh cilantro, finely chopped
  • 1 Large eggs, to make cornbread

Instructions

  1. Preheat oven to 400ºF. Heat an oven safe skillet over medium-high, cast iron works great for this.
  2. Add grapeseed oil and ground beef to skillet. Cook and stir for 5 to 6 minutes until beef is cooked through and starting to brown.
  3. Add onions, stir for 4 to 5 minutes until onions begin to soften.
  4. Add beans, green chilies, sauce and cilantro. Stir well and remove from heat.
  5. Mix together cornbread according to package directions using milk, egg and oil.
  6. Spread batter out in a single layer over beef mixture. Cook for 15 to 20 minutes, or until nicely browned.
