Green Chile Chicken Cheesesteak Torta

Ingredients

  • 1 1/2 cups Asadero cheese
  • 1 1/2 tbsp Extra virgin olive oil
  • 1/4 cup Fresh cilantro, leaves only, finely chopped
  • 1 1/2 cups Fresh red onion(s), thin sliced
  • 1 1/2 lb Pollo con chile verde
  • 1 Medium Haas avocado(s), thinly sliced
  • 1 1/2 cups Red bell pepper(s), thin sliced
  • 4 Bolillo rolls

Instructions

  1. Preheat oven to 350°F. Heat a large skillet over medium high. Add oil and meat to pan.
  2. Break apart chunks into a single layer as it starts to cook. Sear well just until starting to brown.
  3. Add onions and peppers to pan. Stir to combine and cook until onions and peppers start to soften. Cook about 10 to 15 minutes.
  4. While meat is cooking slice a wedge out of each bolillo roll from end to end. Fill with a layer of cheese and place on a baking sheet in oven for about 5 minutes, just to melt cheese.
  5. Load meat and bell peppers into bolillo roll and top with cilantro leaves and avocado slices.
  6. Chef's note: for a spicier kick, drizzle with H-E-B That Green Sauce.
