Greek Style Potato Salad

Ingredients
- 32 oz Frozen baby potatoes, olive oil & sea salt, thawed at room temp before cooking
- 1 cup Whole milk Greek yogurt
- 1/2 cup Crumbled feta cheese
- 1/2 cup Red onion, minced or finely diced
- 1/2 cup Crumbled bacon, plus more as needed to taste
- 1/2 cup English or seedless cucumber, diced small
- 2 tbsp Red wine vinegar
- 2 tsp Lemon zest
- 2 tsp Dried oregano
- 1 tsp Garlic powder
- 1 tbsp Fresh chives, or as needed for garnish
Instructions
- Cook potatoes according to package instructions. Cool slightly then cut each potato into quarters and place in a bowl while still warm.
- Add all remaining ingredients, mix well to coat and season to taste.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with chives before serving. Potato salad will keep up to 3 days in fridge.
