Unsaved Greek Style Braised Lentils with Bacon & Feta

Ingredients

  • 1 1/2 tbsp Extra virgin olive oil, plus more as needed for drizzling
  • 12 oz Dry cured center cut black pepper bacon, diced small
  • 1 cup Red onions, diced
  • 1 tbsp Garlic clove, minced or zested
  • 1 tbsp Dried oregano
  • 2 Dried bay leaves
  • 1 Large lemon, yellow peel only; juice squeezed and reserved
  • 2 cups Dry lentils, green or brown, sorted for pebbles and washed
  • 5 cups Chicken stock, or vegetable stock
  • 1/4 cup Fresh dill, chopped
  • 1/4 cup Fresh mint, chopped
  • 6 oz Crumbled feta, or as needed to garnish
  • 1/4 cup Fresh parsley, chopped

Instructions

  1. Heat a medium-size, heavy-bottom pot or Dutch oven on medium heat.
  2. Add oil and bacon, and stir-fry for approximately 3 to 4 minutes before adding onions, garlic, oregano, bay leaves, and lemon peel.
  3. Continue to cook until bacon just starts to crisp. Add lentils and sauté for another 2 to 3 minutes before adding stock and lemon juice.
  4. Bring to a simmer, turn heat to low, and cook for 25 to 30 minutes or until lentils are tender and liquid has been absorbed. Turn off heat.
  5. Add mint and dill, stir, and let sit for 10 minutes. Garnish with feta and parsley as desired.
  6. Chef's Note: I like to stir in 1 tablespoon of red wine vinegar to finished dish to wake up the flavor a bit.
