Greek Salad Shrimp Wrap

Ingredients

  • 8 oz Cooked peeled and deveined tail-off extra small shrimp, 100-150ct /lb, thawed
  • 1 package H-E-B Garden To Go Mediterranean Salad
  • 1 Large tomato, chopped
  • 1 Cucumber, peeled, sliced lengthwise seeds removed and chopped
  • 1/2 cup Feta cheese garlic & herb
  • 8 oz Romaine hearts

Instructions

  1. Combine thawed shrimp, salad with liquid, tomato, cucumber and feta cheese in a salad bowl; toss to coat ingredients with marinade from the Mediterranean salad mix.
  2. Cover salad with plastic wrap and chill for 30 minutes or more before serving.
  3. To serve, scoop 1/2 cup salad into each lettuce scoop and place on a serving platter.
