Gorgonzola Cream Sauce

Serves 6

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1/4 cup Shallots, minced or chopped fine
  • 1/4 tsp Crushed red pepper flakes, or as needed for extra heat
  • 1 1/2 cups Heavy whipping cream
  • 3/4 cup Gorgonzola cheese crumbles, or 1 cup if you prefer a sharper flavor
  • 1 tsp Sherry vinegar

Instructions

  1. Place a small sauce pot over medium heat. When hot add oil, shallots, red pepper flakes and a pinch of salt and pepper.
  2. Sauté until shallots just start to slightly brown, then add cream, Gorgonzola and sherry vinegar. Turn heat down to low.
  3. Whisk sauce until cheese melts and mixture is smooth and sauce thickens.
  4. Remove from heat season to taste as needed and serve with steak, mushrooms or any grilled vegetables.
  5. Chef's Note: Refrigerate any leftover sauce for up to 3 days.
