Gooey Ham and Cheese Stuffed Baked Potatoes

Serves 4

Ingredients

  • 4 Medium russet potatoes, well scrubbed
  • 6 tbsp Salted Butter
  • 4 oz Cream cheese
  • 6 oz Gouda cheese, shredded, divided use
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 1/2 lb Post Oak Smoked Ham, 1/2 inch thick slice, cubes

Instructions

  1. Microwave potatoes until tender, about 5 to 7 minutes each, depending on size.
  2. Preheat oven to 400ºF. While potatoes are cooking, melt butter, cream cheese, and half of Gouda cheese in a saucepan. Stir in salt and pepper.
  3. Scoop out middle of potatoes and add to melted cheese mixture along with cubed ham. Stir and scoop back into potato skins.
  4. Top with remaining cheese and heat in oven, just until cheese is melted and starting to brown on top, about 6 to 7 minutes.
