Golden Sweet Potato Casserole

Ingredients
- 1 Large eggs
- 2 lb Sweet potato, peeled and boiled
- 1/2 tsp Nonfat plain yogurt
- 8 oz Crushed pineapple
- 2 oz Pecan pieces
- 5.2 oz Miniature marshmallows
Instructions
- Heat oven to 350°F.
- Spray a 1 1/2 quart baking dish with non-stick cooking spray; set aside.
- Place all ingredients except marshmallows in a mixing bowl. Beat until fluffy.
- Pour sweet potato mixture into prepared baking dish.
- Bake uncovered for 25 minutes.
- Remove from oven and top with marshmallows. Continue baking until marshmallows are puffed and lightly browned.
