Gnocchi Sorrentina

Ingredients
- 2 tbsp Italian olive oil, divided use
- 2 cloves Garlic, chopped
- 28 oz Italian San Marzano tomatoes, chopped
- 3 tbsp Kosher salt, divided use
- 1/2 cup Fresh basil
- 1 lb Italian gnocchi
- 8 oz Shredded mozzarella
- 1/2 cup Parmigiano Reggiano, freshly grated
Instructions
- Set a large pan or skillet over medium heat, add 1 Tablespoon of olive oil and sauté garlic.
- Add canned tomatoes, 1 teaspoon of salt and basil. Simmer for 25 minutes.
- Bring a large pot of water to a rapid boil then add the remaining salt.
- When the water returns to a boil, stir in the gnocchi. Cook until gnocchi float to the surface.
- Remove gnocchi with a slotted spoon and place in an ovenproof baking dish with remaining olive oil.
- Add tomato sauce and mozzarella. Toss to combine.
- Sprinkle Parmigiano Reggiano over the top and bake for 20 minutes until mozzarella is melted.
