Gnocchi Antipasto Salad

Ingredients
- 16 oz Gnocchi
- 2 tbsp Extra Virgin Olive Oil
- 1/2 cup Fire Roasted Red Peppers, chopped
- 1 cup Shredded Parmesan Cheese
- 1 cup Quartered Artichoke Hearts, chopped
- 1/2 cup Salami, chopped
- 1/2 cup Prosciutto, chopped
- 2 Medium lemon, zest from one lemon set aside and both lemons juiced
- 1 cup Red radishes, thin sliced
- 2 tsp Adams Reserve Seafood All Purpose
- 1 cup Fresh Basil, chopped
- 1/4 cup Extra Virgin Olive Oil
Instructions
- Cook pasta according to package directions. Drain and toss with 2 tablespoons of olive oil. Refrigerate for 30 minutes before using.
- In a large bowl, add pasta, peppers, cheese, artichokes, salami, prosciutto, lemon zest and juice, radishes, rub, basil and remaining olive oil.
- Toss together and season to taste with salt and pepper if needed, serve immediately or refrigerate for later use.
