Unsaved Gnocchi Antipasto Salad

Ingredients

  • 16 oz Gnocchi
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 cup Fire Roasted Red Peppers, chopped
  • 1 cup Shredded Parmesan Cheese
  • 1 cup Quartered Artichoke Hearts, chopped
  • 1/2 cup Salami, chopped
  • 1/2 cup Prosciutto, chopped
  • 2 Medium lemon, zest from one lemon set aside and both lemons juiced
  • 1 cup Red radishes, thin sliced
  • 2 tsp Adams Reserve Seafood All Purpose
  • 1 cup Fresh Basil, chopped
  • 1/4 cup Extra Virgin Olive Oil

Instructions

  1. Cook pasta according to package directions. Drain and toss with 2 tablespoons of olive oil. Refrigerate for 30 minutes before using.
  2. In a large bowl, add pasta, peppers, cheese, artichokes, salami, prosciutto, lemon zest and juice, radishes, rub, basil and remaining olive oil.
  3. Toss together and season to taste with salt and pepper if needed, serve immediately or refrigerate for later use.
