Ginger Sugar Snap Peas

Serves 2

Ingredients

  • 2 tsp Toasted sesame oil
  • 2 tsp Salted butter
  • 1 tbsp Shallot, very finely chopped
  • 2 tsp Fresh ginger root, peeled and finely grated
  • 1 tsp Fresh garlic clove, very finely minced
  • 2 tsp Brown sugar
  • 1 tbsp Low sodium soy sauce
  • 8 oz Sugar snap peas

Instructions

  1. Heat a large skillet over medium heat. Add sesame oil, butter, shallots, ginger and garlic to pan. Sauté for 3 to 5 minutes, or until shallots are very soft.
  2. Add brown sugar and soy sauce to pan. Stir, just to melt sugar, about 1 minute.
  3. Add sugar snap peas and stir to coat. Stir-fry for about 3 to 4 minutes, or just until peas start to soften, but not get mushy. Remove from pan and serve immediately.
