Ginger Peach Chicken Skewers

Ingredients
- 1 lb Boneless, skinless chicken breasts, cut into thin slices and threaded onto skewers
- 1/2 tsp Fine crystals sea salt
- 2 Peaches, peeled, seeded and cubed (can use frozen if fresh are unavailable)
- 1 tbsp Fresh ginger root, grated
- 2 Peeled garlic cloves
- 1 Jalapeño pepper
- 1 tbsp Lime(s), juiced
- 1/2 bunch Cilantro
- 12 Wooden skewers, soaked in water for 30 minutes
Instructions
- Soak skewers for a minimum of 30 minutes.
- Slice chicken into thin slices and thread onto the skewers, then season with salt.
- Combine peaches, ginger, garlic cloves, jalapeño and lime juice into blender or food processor. Blend until smooth.
- Place chicken in a large baking dish or zip top bag. Cover with marinade and coat evenly. Allow chicken to marinate for up to 3 hours.
- Preheat grill to medium high heat. Remove chicken from marinade, gently shake off any extra.
- Grill chicken for approximately 7 minutes per side, or until the internal temperature reaches 165°F.
- Garnish with cilantro and lime wedges.
