Ginger Lime Vinaigrette

Ingredients
- 1 tsp Dijon mustard
- 1 cup Whole milk plain yogurt
- 1 Medium Lime, juiced and zested
- 1/3 cup Fresh cilantro, finely chopped
- 1/2 cup Extra virgin olive oil
- 2 tsp Honey
- 1 tbsp Fresh ginger root, finely grated
- 1/4 cup Green onions, white and green parts, finely chopped
Instructions
- Add ginger, lime zest, honey, mustard, green onion, cilantro and yogurt to blender. Add half of lime juice and blend.
- While motor is still running add oil in a thin stream until incorporated.
- Adjust consistency to desired thickness with remaining lime juice. Add salt & pepper to taste.
