Ginger Lime Vinaigrette

Ingredients

  • 1 tsp Dijon mustard
  • 1 cup Whole milk plain yogurt
  • 1 Medium Lime, juiced and zested
  • 1/3 cup Fresh cilantro, finely chopped
  • 1/2 cup Extra virgin olive oil
  • 2 tsp Honey
  • 1 tbsp Fresh ginger root, finely grated
  • 1/4 cup Green onions, white and green parts, finely chopped

Instructions

  1. Add ginger, lime zest, honey, mustard, green onion, cilantro and yogurt to blender. Add half of lime juice and blend.
  2. While motor is still running add oil in a thin stream until incorporated.
  3. Adjust consistency to desired thickness with remaining lime juice. Add salt & pepper to taste.
