Ginger Lamb And Coconut Rice

Serves 4

Ingredients

  • 2 tsp Extra virgin olive oil
  • 1 cup Basmati rice
  • 1/2 cup Lite coconut milk
  • 1 cup Water
  • 1 tbsp Fresh ginger root, peeled and grated
  • 1 tbsp Fresh garlic clove
  • 1 lb Ground lamb
  • 1 Green onion, cut into 2 inch pieces
  • 1/2 cup Roma tomatoes, chopped
  • 1/4 cup Fresh basil, chopped
  • 1/4 cup Chopped cilantro
  • 1 tbsp Lime, juiced

Instructions

  1. In a medium pot, heat half of oil. Add rice and cook, stirring constantly until rice is lightly toasted. Approximately 10 minutes.
  2. Add coconut milk and water. Bring to a simmer. Cover, reduce heat and cook 15 minutes. Then remove from heat and set aside.
  3. Meanwhile, heat large skillet over medium-high heat. Add in remaining oil, grated ginger and garlic. Stir quickly and add ground lamb, breaking into small pieces while stirring. Cook 4 - 5 minutes until lamb starts to brown then add remaining ingredients. Continue cooking until lamb is thoroughly cooked and no longer pink.
  4. Serve over rice with squeeze of lime.
