Garlicky Sage Butternut Squash Noodles with Ground Turkey

Serves 4

Ingredients

  • 2 tbsp Extra virgin olive oil, divided use
  • 1 lb Lean ground turkey
  • 3 Fresh garlic clove, sliced
  • 1 tbsp Fresh Sage Leaves
  • 1/2 cup Chicken Stock
  • 10.5 oz Butternut Squash Spirals
  • 1/4 cup Shredded parmesan cheese

Instructions

  1. Heat half of olive oil in a large skillet on medium-high.
  2. Add ground turkey and brown, breaking up with a fork as it cooks; transger to a bowl.
  3. Add remaining oil to the same pan along with garlic and sage leaves; cook 2 to 3 minutes or until browned.
  4. Stir in chicken stock and continue to cook until reduced by half.
  5. Add in noodles and turkey, toss well, and cook until noodles are heated through and turkey is warm.
  6. Remove from heat, top with Parmesan cheese and serve.
