Garlic Wasabi Potato Cakes

Ingredients

  • 4 Medium russet potato, washed and patted dry
  • 3 tbsp Extra virgin olive oil, divided use
  • 1 Medium leek, root removed, white part only, washed, medium diced
  • 1/2 cup Yellow onions, medium diced
  • 2 tsp Garlic Salt With Parsley, divided use
  • 1/2 cup Green onion, green tops only, thinly sliced
  • 1 tbsp Soy sauce
  • 1 tbsp Wasabi paste

Instructions

  1. Pierce potatoes several time with a fork. Microwave until soft all the way through or, if desired, bake in a conventional oven at 350ºF for 1 hour.
  2. Cut potatoes open, remove insides and place in a large bowl. Set aside for later use.
  3. Add 1 tablespoon of oil to a large sauté pan over medium heat. Add leeks and yellow onions to hot oil and cook 4 to 5 minutes, stirring occasionally, until onions soften.
  4. Sprinkle half of garlic salt over leek mixture. Add green onions, cook until bright green then add soy sauce and stir for 30 seconds. Add to the potato bowl.
  5. Add remaining garlic salt and wasabi paste to bowl and mash with the back of a large spoon until no large lumps remain. Form into 8 equal-size patties, about 1 inch thick.
  6. Return pan to heat and add 1 tablespoon of oil. When oil is hot, add 4 patties to pan and cook 2 to 3 minutes or until browned.
  7. Flip patties and cook for another 2 to 3 minutes until second side is browned and heated through. Transfer to a plate to keep warm and repeat with remaining oil and patties.
