Ingredients

  • 1 tbsp True Texas BBQ Sweet TX Heat Rub
  • 15.5 oz Canned blackeye peas, drained and rinsed
  • 1 tbsp Cooking oil
  • 1/2 cup Creole seasoning vegetable mix
  • 1 1/4 lb Garlic peppercorn pork tenderloin, drained and sliced into 1/2 rounds

Instructions

  1. Heat oil in a large skillet set over medium-high heat. When hot, add sliced pork and cook for 2 minutes per side.
  2. Pour creole seasoning vegetables and blackeye peas over the pork. Sprinkle seasoning on top, reduce heat to medium, and cook for 10 minutes. Serve with hot sauce or rice if desired.
