Garlic Cashew Sauce

Ingredients
- 1 cup Whole cashews
- 2 tbsp Tahini
- 3 Garlic clove, smashed
- 2 tbsp Fresh lemons, juice
- 1/3 cup Fresh Italian parsley, chopped roughly
- 2 tbsp Fresh chives, chopped
- 1 cup Water, as needed for consistency
Instructions
- Place cashews in a bowl or large Tupperware container and add enough water to completely submerge them by 3 to 4 inches.
- Let cashews soak at least 8 hours or 24 hours if time permits for best results.
- Drain cashews and add them to a food processor along with the tahini, garlic, lemon juice, parsley, and chives.
- Add 1/2 cup of water, a 1/4 cup at a time to reach the consistency of a cream sauce.
- Season to taste with salt and pepper as needed.
- Serve the dressing cold on salads, toss with pasta, or serve over salmon.
