Garlic Cashew Sauce

Ingredients

  • 1 cup Whole cashews
  • 2 tbsp Tahini
  • 3 Garlic clove, smashed
  • 2 tbsp Fresh lemons, juice
  • 1/3 cup Fresh Italian parsley, chopped roughly
  • 2 tbsp Fresh chives, chopped
  • 1 cup Water, as needed for consistency

Instructions

  1. Place cashews in a bowl or large Tupperware container and add enough water to completely submerge them by 3 to 4 inches.
  2. Let cashews soak at least 8 hours or 24 hours if time permits for best results.
  3. Drain cashews and add them to a food processor along with the tahini, garlic, lemon juice, parsley, and chives.
  4. Add 1/2 cup of water, a 1/4 cup at a time to reach the consistency of a cream sauce.
  5. Season to taste with salt and pepper as needed.
  6. Serve the dressing cold on salads, toss with pasta, or serve over salmon.
