Unsaved Garden Zucchini & Ham Frittata

Ingredients

  • 2 tsp Extra virgin olive oil
  • 1/2 cup Green onion, thin sliced
  • 2 tbsp Red bell pepper, chopped
  • 1/2 cup Zucchini squash, chopped
  • 1 tbsp Fresh basil, sliced
  • 1 oz Black forest shaved ham, sliced
  • 1/2 cup Liquid eggs

Instructions

  1. Heat a heavy bottom skillet over medium low heat for 2 minutes.
  2. Add the olive oil, green onions, bell pepper and zucchini and cook.
  3. Stir for 3 minutes.
  4. Add the basil and ham strips and cook for 1 more minute.
  5. Add the eggs and cook to desired doneness.
