Fully Loaded BBQ Mashed Potatoes

Ingredients

  • 2 1/2 lb Yukon Gold potatoes, rinsed and cut into quarters
  • 1/2 cup Whole Milk
  • 1 Unsalted butter
  • 1/4 cup Cookwell & Company Pecos 83 Barbecue Marinade
  • 4 slices Bacon slices, cooked and crumbled
  • 1/4 cup Fresh green onion, chopped
  • 1/2 cup Shredded cheddar cheese

Instructions

  1. Place potatoes in a large pot of well salted water and boil 8 to 10 minutes, or until tender.
  2. While potatoes are boiling, place milk, butter and marinade in a small saucepan over low heat. Stir until butter is melted. Remove from heat.
  3. Strain potatoes and mash with a potato masher or whisk.
  4. Add milk and marinade mixture a small amount at a time, mashing with each addition.
  5. Stir in bacon, onions and cheese to potatoes.
