Frito Pie Dinner

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 2 lb 80/20 ground beef
  • 7 oz Diced Sweet Onions, divided use
  • 33 oz Cookwell & Company Texas Two Step Chili
  • 15 oz Red Kidney Beans
  • 8 oz Corn Chips
  • 4 oz Shredded Three Cheese Cheddar Blend

Instructions

  1. Heat a cast iron skillet or a large pot over medium high. Add oil and ground beef. Stir to break up chunks. Cook 3 to 4 minutes to begin browning.
  2. Add 1 cup onions and cook another 6 to 7 minutes to soften onions and brown beef well.
  3. Add chili mix and beans. Stir just until heated through and bubbling. Serve directly from skillet. If using a large pot, pour into serving dish.
  4. Tuck corn chips all around the edge and garnish with cheddar cheese and remaining onions if desired.
