Fried Tamale Stuffed Poblanos

Ingredients

  • 4 Medium poblano peppers, washed and dried
  • 2 tsp Canola oil
  • 6 Pork tamales, cut into 1/2 inch sections
  • 1 1/2 cups Spanish rice
  • 3/4 cup Fresh pico de gallo
  • 8 oz Shredded mild cheddar cheese, divided use

Instructions

  1. Heat oven to 425°F.
  2. Use a sharp paring knife to make a cut from top of each poblano to near the tip. Cut about an inch around the stem and make another cut to near the tip to create a V-shaped opening. Gently trim away seed pod and as much membrane as possible.
  3. Heat a skillet on medium-high.
  4. Add oil and tamales pieces to hot pan, stir and cook 3 to 5 minutes, just until edges start to get slightly crispy. Remove from heat and set aside.
  5. In a medium-sized bowl, mix together rice, pico de gallo and half of cheese. Stir tamales through rice mixture then gently spoon into peppers.
  6. Place stuffed poblanos in a casserole dish and top with remaining cheese.
  7. Cover and bake for 30 minutes. Uncover and return to oven for 5 minutes to brown cheese. Serve with garnishes such as cilantro, sour cream and guacamole.
