  • 1/2 tsp Kosher salt
  • 1 Large eggs
  • 1/3 cup H-E-B 1877 Sparkling Water
  • 1/2 cup Parmesan Fresh Grated Cheese
  • 1 cup Panko Plain Bread Crumbs
  • 2 Medium zucchini squash

Instructions

  1. Add 2 to 3 inches of oil to a heavy pan or wok (amount needed will vary according to pan size). Heat oil to 350ºF. Pre-heat oven to 200ºF.
  2. Add flour, potato starch and salt to a bowl and whisk together. Remove 1/4 cup of flour mixture and reserve.
  3. In another small bowl, gently whisk together egg and sparkling water. Keep batter chilled in refrigerator while slicing zucchini.
  4. Mix parmesan cheese and bread crumbs together on a plate or in shallow bowl.
  5. Cut zucchini using a spiralizer ribbon-cutting blade. Separate zucchini into 3 to 4 inch long spirals.
  6. Gently separate each zucchini spirals a little and secure with a tooth pick through the middle to hold the layers apart. Sprinkle well with reserved flour mixture.
  7. Working in batches dip zucchini spirals in batter and sprinkle with parmesan/bread crumb mixture.
  8. Gently place in hot oil and fry 1 to 2 minutes on each side, or until golden brown. Remove from oil and keep warm in oven. Repeat with remaining zucchini.
  9. Chef's Note: serve with ranch dressing or a spicy aioli for dipping if desired.
