Fried Cheese Tacos Norteños

Ingredients
- 1 tbsp Extra virgin olive oil
- 1 1/2 lb Bistec norteños, Mexican Seasoned Beef
- 1 cup Red onion, finely diced
- 16 Ready to cook flour tortillas
- 1 Extra virgin olive oil, (sprayable)
- 2 cups Shredded asadero cheese, (shredded Asadero cheese)
- 12 oz Pico de gallo
- 2 Small avocados, thinly sliced
- 1/4 cup Fresh cilantro, leaves only
Instructions
- Heat a large skillet over medium-high.
- Add oil and beef to pan. Break up chunks with a spoon as it cooks. Cook for 7 to 8 minutes until liquid evaporates and meat starts to brown.
- Add onions and cook until they begin to soften. Remove from heat.
- Heat another empty, dry skillet over medium-high.
- Spray both sides of tortillas lightly with short bursts of spray oil. Toast tortilla in skillet until lightly brown on one side.
- Flip over and load cooked side with cheese. Cook about 1 minute until cheese begins to soften.
- Flip over onto cheese side so that cheese is face down in the skillet. Cook about 2 minutes. Remove from pan to serving plate.
- Top fried cheese side with beef, pico de gallo, avocado and fresh cilantro.
- Chef's Note: Can also top with whatever salsa you choose.
