Fried Cheese and Beef Fajita Tacos

Ingredients
- 1 tbsp Canola oil
- 1 lb Beef skirt steak for fajitas, (seasoned, ready to cook)
- 14 oz Mild pico de gallo, divided use
- 15 oz Spicy charro beans
- 8 White corn tortillas
- 1 1/2 cups Shredded sharp cheddar cheese
Instructions
- Heat a grill pan or large skillet on medium-high.
- Add oil and beef to pan. Break up chunks with tongs as meat cooks. Cook for 9 to 10 minutes or until fully cooked and well seared.
- Reduce heat to medium and add half of pico de gallo. Simmer for 1 to 2 minutes, just to soften onions slightly. Remove from heat.
- Empty beans and approximately half of liquid in can into a blender, blend until smooth and set aside.
- Heat another empty, dry skillet on medium-high.
- Spray both sides of tortillas lightly with short bursts of spray oil. Working in batches, toast tortillas in skillet until lightly brown on one side.
- Flip over and load cooked side with cheese. Cook about 1 minute until cheese begins to soften.
- Flip over onto cheese side so that cheese is face down in the skillet. Cook about 1 minute. Remove from pan to serving plate.
- Top fried cheese side with beans, beef and remaining pico de gallo.
- Chef's Note: You can add additional toppings as desired such as avocado, cilantro and sour cream.
