Fresh Peach Bellini

Ingredients

  • 1/3 cup Liquid Turbinado Cane Sugar
  • 2 cups Fresh peaches, diced
  • 1/4 cup Cold water
  • 6 oz Prosecco, approximately 1 bottle (6.32 oz) or more as needed
  • 1/2 cup Raspberries
  • 2 tbsp Fresh squeezed lime juice

Instructions

  1. Combine peaches, lime juice, raspberries, liquid sugar, and water in a blender and blend until smooth.
  2. Refrigerate for at least 30 minutes to allow flavors to meld. If desired, strain puree through a fine-mesh sieve to remove all raspberry seeds and particulates.
  3. Serve in fluted champagne or cocktail glasses with approximately 2 tablespoons of peach puree in each glass. Fill with prosecco and enjoy.
  4. Chef's Note: Peach puree will keep up to 5 days in fridge, simply shake before using as puree will separate.
