Fresh Peach Bellini

Ingredients
- 1/3 cup Liquid Turbinado Cane Sugar
- 2 cups Fresh peaches, diced
- 1/4 cup Cold water
- 6 oz Prosecco, approximately 1 bottle (6.32 oz) or more as needed
- 1/2 cup Raspberries
- 2 tbsp Fresh squeezed lime juice
Instructions
- Combine peaches, lime juice, raspberries, liquid sugar, and water in a blender and blend until smooth.
- Refrigerate for at least 30 minutes to allow flavors to meld. If desired, strain puree through a fine-mesh sieve to remove all raspberry seeds and particulates.
- Serve in fluted champagne or cocktail glasses with approximately 2 tablespoons of peach puree in each glass. Fill with prosecco and enjoy.
- Chef's Note: Peach puree will keep up to 5 days in fridge, simply shake before using as puree will separate.
