Fresh Oregano and Mint Vinaigrette

Ingredients

  • 1/3 cup Fresh mint, leaves loosely packed
  • 3 Garlic cloves, smashed
  • 3/4 cup Extra virgin olive oil
  • 1/3 cup Fresh oregano, leaves loosely packed
  • 1 cup Fresh basil, leaves loosely packed
  • 1/4 cup Lemons, juiced
  • 1/4 cup Shallots, minced
  • 1 tbsp Dijon mustard

Instructions

  1. In a blender, combine oregano, mint, basil, garlic, shallots, mustard and lemon juice together.
  2. Turn blender on, and slowly add olive oil to form an emulsion, season to taste with salt and pepper.
  3. Use immediately or refrigerate for up to 3 days.
