Fresh Mint Gremolata

Ingredients

  • 1 cup Extra virgin olive oil
  • 1 tbsp Fresh lemons
  • 1/2 cup Fresh mint, minced or chopped fine
  • 2 Garlic cloves, minced or zested, approximately 2 tsp
  • 1 tbsp White balsamic vinegar

Instructions

  1. In a bowl combine all ingredients and mix well. Season to taste and refrigerate at least 30 minutes to allow flavors to meld.
  2. Serve over grilled vegetables or grilled meats. Keeps up to 3 days in the refrigerator.
  3. Chef's Note: My favorite application for this is drizzled over fresh cut watermelon.
