Fresh Mint Gremolata

Ingredients
- 1 cup Extra virgin olive oil
- 1 tbsp Fresh lemons
- 1/2 cup Fresh mint, minced or chopped fine
- 2 Garlic cloves, minced or zested, approximately 2 tsp
- 1 tbsp White balsamic vinegar
Instructions
- In a bowl combine all ingredients and mix well. Season to taste and refrigerate at least 30 minutes to allow flavors to meld.
- Serve over grilled vegetables or grilled meats. Keeps up to 3 days in the refrigerator.
- Chef's Note: My favorite application for this is drizzled over fresh cut watermelon.
