Unsaved Fluffy Shrimp Omelet for Two

Ingredients

  • 3 Large eggs
  • 2 tbsp Light sour cream
  • 2 tbsp Light mayonnaise
  • 1 tbsp Fresh chives, chopped
  • 1 tbsp White onions, chopped
  • 2 tbsp Unsalted butter
  • 1/2 cup 71/90 cooked, tail-off shrimp, tails removed, shrimp peeled and deveined
  • 1/2 cup Shredded mild cheddar cheese

Instructions

  1. Whip together eggs, sour cream, mayo, chives, and onions.
  2. Melt butter over medium heat in a non-stick skillet; add egg mixture and cook slowly until halfway done.
  3. Place shrimp and half of cheese on omelet; continue cooking until egg is half cooked.
  4. Fold in half and top with remaining cheese, cooking until cheese is melted.
