Flaming Chicken Breakfast Taco

Ingredients
- 1 cup H‑E‑B Flaming Bird Orange Pepper Seasoned Chicken Thigh for Fajitas
- 2 Large eggs
- 4 Mixla Tortillas
- 2 tbsp Fresh medium salsa
- 1 tbsp Fresh cilantro, chopped
Instructions
- Preheat a large non-stick pan to medium-high.
- Spray with non-stick spray and add chicken. Cook until internal temperature is 165ºF.
- Clean pan and reheat to medium.
- Add eggs and cook for 2 to 3 minutes.
- When eggs are almost done, return chicken to the pan and stir to combine. Transfer to a bowl.
- Heat tortillas in the microwave for 20 seconds.
- Divide egg and chicken filling among the tortillas. Top with salsa and cilantro. Serve hot.
