Flaming Chicken Breakfast Taco

Ingredients

  • 1 cup H‑E‑B Flaming Bird Orange Pepper Seasoned Chicken Thigh for Fajitas
  • 2 Large eggs
  • 4 Mixla Tortillas
  • 2 tbsp Fresh medium salsa
  • 1 tbsp Fresh cilantro, chopped

Instructions

  1. Preheat a large non-stick pan to medium-high.
  2. Spray with non-stick spray and add chicken. Cook until internal temperature is 165ºF.
  3. Clean pan and reheat to medium.
  4. Add eggs and cook for 2 to 3 minutes.
  5. When eggs are almost done, return chicken to the pan and stir to combine. Transfer to a bowl.
  6. Heat tortillas in the microwave for 20 seconds.
  7. Divide egg and chicken filling among the tortillas. Top with salsa and cilantro. Serve hot.
