Fish Taco Bowl

Ingredients
- 2 tbsp Oil
- 6.5 oz Cod, cut for fish tacos
- 3 tsp Less sodium taco seasoning
- 1 Southwest chopped salad kit
- 10 oz Southwest riced cauliflower, cooked according to package directions
- 2 tbsp Cilantro cotija salad dressing
Instructions
- Heat a medium pan over medium-high heat with 2 Tbsp of oil. Season cod fillets with taco seasoning, and cook for 3 to 5 minutes, turning halfway through, until cod is cooked through.
- Mix salad according to package directions. Add the cooked cauliflower rice to a bowl, top with dressed salad, cooked cod, and a drizzle of cilantro cotija dressing.
